I assume the distinction between the standard and baritone editions of this book are really GCEA vs DGBE tunings, right? So if I have a baritone uke tuned GCEA, I would use the standard edition?

I'd ask the author, Glen Rose.....the standard book would almost certainly be GCEA tuning. Try asking Glen, it never hurts to go straight to the source.

Yes, use the book with the tuning you are using. A tenor tuned to DGBE would use the baritone book.
