I've seen videos on YouTube and various explanations of The K mans right hand technique and how to incorporate it into chord progressions.

I was hoping some one could share some insight into what he is doing during some of his chord melody/solo pieces, specifically 'Kiss from a rose'.
I can play the simple tutorial he teaches online playing with the thumb but really want to be proficient in his right hand technique. Is he simply plucking up with the index to hit melody lines, and the thumb just knocking out ghost notes to fatten it up?

In the video you posted, he's playing almost all of his melody notes with his thumb. That's how he gets such a dark sound. He uses a lot of his teacher's technique of "pinching" as he plays: moving his index finger up at the same time he's strumming down with the thumb.
To learn this technique, you might investigate lessons with Kimo Hussey.
 
I'd aspire to play that well but I'm 99% sure I won't live long enough.
