Good topic, so many people around here go for non-Hawaiian music that we forget were the uke first got popular, as for chords, its a bit hard to isolate any one chord as island sounding, but I can definately help you with some links

A and E are the only chords you can use because B,C,D, F and G do not exist in the Hawaiian alphabet.
