Request suggestions: simple instrumental songs

I'm trying to think of a relatively easy and not too flashy instrumental song or two to learn on the uke. Any suggestions?

I'm a bit of a struggler so please avoid something that would require high-level skills.

We have a collection of mostly-instrumental links here on my uke group's site. For simple, not too flashy, and really satisfying, I'd start with Aaron Keim's stuff.

Thanks everyone. Great help. I've started on Waltzing Matilda, partly because this is a very nice arrangement of something that is done to death, so it's nice to hear it arranged so nicely. I've not come across Aaron Keim's stuff before. There are heaps of good things of his to find.

A friend suggested The Beatles - I Will, which would be good as a chord/melody style instrumental song. I've done a bit of a search but haven't really found a good chord/instrumental solo version. Anyone know of one handy?
