is French polishing a good way to protect mahogany wood of the Itsybitsyuke?

It would certainly cut down on the amount of work usually associated with French polishing.
 
French Polishing is a technique of applying shellac in many many very thin layers. Takes a long time to master, and if you've never done it before, then don't make this your first effort.

However, you can use shellac as a finish that can be brushed on, or even sprayed. Sanded back lightly and applied again to provide a very good finish. This is what I do with students in the one week build classes.
