I love low mellow sounds but have stayed away from a baritone due to different chord shapes.

These strings are GCEA like a tenor so the chord shapes are the same as a tenor but pitched an octave lower. Sound is similar to a classical guitar.

Anyone have these on their baritone that can give some feedback?

Here is a video I recorded on a baritone with the Guadalupe low GCEA strings:

They are indeed good if you don't want to learn new chord shapes.
They are quite bassy, great for rhythm work. Probably handles fingerpicking better than strumming (which can sound a bit muddy)

The ukulele itself may need higher action for the strings not to buzz. They are thicker wound strings than typical strings.

Don't overlook Southcoast linear baritone strings for gCEA tuning, with our without wound strings. Guadalupe back?

Does southcoast do an octave lower though?

Yes Guadalupe CUstom Strings are alive and well at http://thegcs.co Odd name for a url though. too short and no dot com...
