How do you mount a saddle?

How exactly does the saddle stay in place on an instrument? Its probably a dumb question, but I'd like to know. Or is it he bridge? I think.

The bridge is usually glued in place. Sometimes they're held down with screws.
 
The saddle is the straight flat strip that is inset into a groove in the bridge. It just sits there held down by the strings. Remove the strings and it should slide right out.

Not ALL bridges have a separate saddle, sometimes there is just an edge formed by the bridge.

The tension from the stings wouldn't pull the bridge off?
 
Normally, string tension is no match against glue adhesion. Sometimes a bridge will lift or come undone. Re-gluing a bridge is a relatively simple and common repair.
 
The Hana Lima book shows string-through bridges, where the strings go into holes in the bridge and soundboard. A knot on the inside makes it stay there. It's a design that eliminates risk of bridge popping off, I use it since I'm chicken. Hard to reinstall a set of strings if you're comparing different though.
