So what tie method is this???

Okay.....admittedly coming from a guitar some years back I used a certain string for my Ovation Elite that had very small metal colored eyelets that would go through the bridge hole and easily anchor.

So what method is this for my uke of tying off???

I believe those are called tie bar bridges, as also used on classical guitars. Some ukes, especially smaller sizes, use slots for anchoring a knot, others have holes through the bridge and use bridge pins, like many steel string guitars. This video shows how to tie the knots for that bridge.
