I know that the type of wood used in construction of the body/sound board are supposed to have an affect on the tone of a ukulele, spruce sound board on a maple body = "bright", mahogany sound board on a mahogany body = "mellow". Other than the strings used what other factors will influence the tone of a ukulele?

In my opinion:
1. strings (and age of strings)
2. top (hog is mellow, koa brighter, cedar somewhere between and spruce brightest
3. back and sides, laminate vs. solid wood
4. size (smaller is usually brighter)
5. age of instrument (vintage instruments tend to be mellower)
6. thickness of wood. In drums at least, a thicker shell has a brighter attack.
7. how it's played (finger nail length, how it's held against the body, etc.)
The first and last factors have the most influence on the sound.
