what guitar string can i use for a low g string? and what note do i tune it to?

I don't know what guitar string you could use,but don't use a steel one!
There are plenty of threads about what can and can't be used but a steel
guitar string will certainly harm your instrument. It may warp the neck or
pull off the bridge. The note you would tune it to,is (surprisingly!) G but
one octave lower than the high G you will be replacing.

Using the D string (4th) from a classical guitar set will give you a low G and it'll probably be a wound string.

I would suggest Worth Clear strings Low G, they have a low G that is not wound.

I am a fan of the unwound Fremont Flourocarbon Blackline low g string. If you don't mind wound strings try the Savarez Corum D string.

What size uke?

I find that Classical D string works for Soprano, Concert and Tenor for low G.
The Fremont unwound G only works on Tenors, too loose on soprano and concert
