I know it sounds crazy! but is it possible? Obviously extra tuning pegs would have to be attached and the nut and maybe bridge changed. But would it work using the same fret spacings as a soprano to get a standard tuning of a mandolin?

If you mean a 'Mandolin' as in eight steel ( or even nylon) strings in four courses then definitely not. The poor thing would collapse under the tension.

If you just want a uke with mandolin tuning then Aquilla do strings if 'fifths' to give the standard mandolin/fiddle tuning of GDAE. I have two ukes fitted with these for when I play in a folk band as it makes all the standard tunes fall easily under the fingers and gives you a far greater range that standard uke tuning.

I believe they also do a set in fifths for a concert scale uke giving CGDA.
