I have a almost foot wide, 3 inch long, 3 inch deep chunk of across the grain african mahogany. What can I use this for? Bridges?

IMO, it's not the best choice for any part of an ukulele. Maybe as neck and tail blocks but even in that case there are better choices. It's not a particularly worthy instrument wood.

Depends on which "African mahogany" it is. Khaya is fine, and a lot of folks like Sapele. There are other woods called "African mahogany" that are not so great.

Sapele, "the poor man's koa" is what it's called here. Not that that it shouldnt be used but again, I'm not a fan.

Sapele was the veneer of choice in the 60's and 70's for interior flush doors. Can't look at the instrument I am making in at at present without thinking, "Where does the handle go?"

I saw some gorgeous "Blister Sapele" that would have made an incredible looking uke IMO.
