Hello! I am currently working on Jerry Douglas' (Feat. Mumford & Sons) cover of The Boxer by Simon and Garfunkel. I have found the chords and have been working with those, but I can't seem to figure out the strumming pattern. I have tried to watch several covers on youtube but most people pick the song (which I would do if I could find the tabs to). If you have any advice or suggestions, that'd be fantastic, thank you.

You can listen to the song here:

The original song is picked so people are picking. If you want to strum it you can and just do your own thing. Its your art.

You don't need tabs to pick. You just pick. When your realise that its easy.

As Anthony said, picking is like strumming. Picking patterns are usually established at the beginning of your song and used throughout the chord progression. Just pick something that sounds nice to you with the chord progression of the song and practice getting it up to the tempo you want. I usually default to starting out with a picking pattern of C-E-G-A-G-E (open string names).
