While not JUST a pianist (by which I mean he plays organ and synthesizer also), I have to say Tony Banks of Genesis is the first one to come to mind as a favorite of mine. The intro of "Firth of Fifth" from "Selling England By The Pound" is one of my favorite piano pieces of all time.
