One thing we forgot to mention is that this technique is not limited to just the C, E, and A strings. Especially if your ukulele is equipped with a low G, you can easily assign your thumb to the top string, too.

I may very well employ this technique. It sounds easy enough.

My first thought when I heard the way it sounded was of Snow Patrol's "Chasing Cars".

Cool, simple technique. Should be good when playing many different things.

Another thing you can do to add to it is use your high g string in place of every other C pluck.

So you get an effect like this. (We'll call playing the g string G.)

A - B - G - B - A - B - G - B

It adds a cool 'shadow' note to the chord line. :D
