The Underrated Pork Steak

Usually, these are killer on the grill with Soul Food seasoning (find it at $General) but I thought I'd try something different.
Brined, braised, and baked. Steamy and straight out of the Dutch Oven.
I'm "bach'n" it, so the side dish is Stovetop Pork stuffing.

The drink today is a Mid-West Mexican Mule. (You read it here first, folks.)
In a filled rocks glass:
1 oz white Teq
1 splash T-sec
2 dash Peychaud's
A good squeeze of those leftover-from-the-holidays "cuties" mini-oranges
Top off with ginger beer (here, the only good choice is Goslings)
Slice of Cutie on a stick for garnish

I agree, a good pork steak is hard to beat. Those look quite tasty. And your cocktail sounds fantastic!! I usually grill them. Seasoned with a bit of low salt soy sauce, granulated garlic and fresh ground black pepper. Occasionally I will use Lemon Pepper to season them.

It's those little miniature oranges. We "used" to have tangerines, then there were mandarins, clementines, and now "halos and cuties"... although Elton John's "Tiny Dancer" (whatever that was) does come to mind.
