The shafts fit perfectly in the holes. The knobs stick up a bit higher then the originals, as they've got an extra shape, like a collar, at the base. I'll take a pic for comparison.
Very clever idea on the different colored cases! I have some black hard cases with stickers, and some black foam cases. Perhaps one could sew appliqués on those for a little individuality?

No experience with the Mainland spruce top tenor, but I can personally attest that their cedar-topped rosewood baritone sounds very "classical guitar-like." Beautiful sound.

That looks to be a Phitz hard case. Amazon had many different designs in the past, but there are none available now. I have a silver faux ostrich one. They're decent cases.

I totally hear ya about being fussy, Jerryc! One of the great things about Sarah is the included strap is such a soft suede. Velvety soft, buttery soft, sofffffffffft.
