3mm action is common, but not the final answer. I prefer 2.5mm or a tad lower and any decent setup should be able to achieve that easily. I once asked for 2mm from a custom builder and he did it but...

you need a two input audio interface. You'll want to look for ones with the right inputs and outputs for your hardware but many have a direct line input for guitar/bass and another for microphone....
Well, you will have a much easier time recording simultaneously to two tracks instead of trying to mix first and record as a single track. That way you can control the recording levels independently...

You should also be able to get a new nut made for your GL1 with the string spacing you want. That should be relatively inexpensive to have done
They definitely vary. If you want something wider, there are some models that claim a 50mm nut like the Koaloha Opio. Also some baritone scale like Cordoba Mini and Islander GL6.
