I was taught to the gullet, but I also like what dwizum says. There are times that I just don't want that much blade showing, but too low definitely increases the possibility of kickback.
That is a pretty deap dent, isn't it? How many times did you steam it? I would also try dripping water into the depression and letting it sit. If this helps, (even if just a little) do it more.
