Those Dolphins are well regarded - you might want to get a clip on tuner too. :)

(With limited use of your right hand, it may be a good idea to start off right handed, even though you are left handed, as you need to manipulate the fingers to make chords & notes on the fretboard.)
 
I think I'm going to purchase a uke from Mim's Ukes(a Kala Dolphin) and ask her to make it a lefthanded one. Is this a good option as well?

You absolutely can't go wrong with Mim, great choice.
 
Yes it is. Make sure to tell Mim about your hand issues and she can adjust the action so it plays with more ease.
