It's OK but I think you may soon tire of that method. You'll find that the odd cut where the knife will veer off, which is why he is doing very light cuts to begin with. The veneer also disappears under the straight edge/rule, meaning that you are left with around 2" of veneer. I've tried a few very similar methods.
Now I just laminate a number of veneers together and send them through the bandsaw, fine blade off course. 3 ply x 0.5 mm is common and they are easy enough to bend. You can even cut them with a cutting gauge although you will need to score from both sides. No loss to sawdust but again the cutter can be prone to veering off. I have built rosettes with some 30 individual strips, glued in all at the same time, it's kind of a traditional method. I never got on with it. I found it much easier using 10 x 3 ply strips. Even with simple black/white/black purfling I pre laminate. It just seems to be the way i.e. try a few methods and go with the one that suits you.
