Wood type soundboard differences

I've been contemplating starting building my first acoustic uke soon (I've made 2 Cigar Box Ukes and an Electric already) and I've always been curious about the differences between the sound and behavior of all the wood types. I did a search and nothing satisfactory came up. It was all just about the standards: Mahogany, Mango, Spruce, Maple, ect. but I never found a comprehensive list. I'm more curious about stuff like black walnut, Zebrawood, Satinwood, Cherry, and stranger stuff like that. I'm especially curious about north american species as I'm somewhat of a locavore. Especially black walnut because I love the look of it.

Anyone able to help?
 
One thing to bear in mind is that the way it's built and string choice will likely make a bigger difference in sound than the wood type.
