I am trying to restring my new (second hand) Guitalele. I have bought a set of Aquila rubino strings but how can I tell which is which?

The packaging usually has them color coded.
6th is the thickest and 1st is the thinnest

6th: A
5th: D
4th: G
3rd: C
2nd: E
1st: A

If this is the set, you should be able to judge thickness pretty easily.
